This is exactly what I need on a snowy Sunday: Cookie dough without gluten and if you replace the chocolate drops with cocoa nibs and take out the eggs you can even make it a vegan dessert. I absolutely adore this recipe and together with my friend Aurelia we created it last summer.
– 80g couscous
– 20g almond flour
– 1 vanilla bean
– 1 tbsp Cinnamon & 1 tbsp stevia
– 1 shot almond milk
– 2 egg whites
– 1 Tbsp Vanilla Protein-powder (if desired)
– Chocolate drops or cocoa nibs
Mix the couscous with boiling water (160ml) and let it sit undisturbed for a few minutes. Add the rest of the ingredients, stir it up (except for the chocolate drops) and put it in the microwave for another 2-5 minutes).
Then add the chocolate drops and enjoy 🙂
